EASY VEGAN BORSCHT

5 Beets – peeled and grated
5l Water
1 Onion -- chopped
1 cup Tomato Puree
1 tablespoon Lemon Juice
1 teaspoon Sugar
1/2 teaspoon Dill
Salt
Pepper

Combine the beetroot with onion and water in a saucepan.


Bring to a boil; cover and simmer about 45 minutes.
Add tomato, lemon juice, dill, salt and pepper.
Cook 45 minutes more. Heat but do not boil. Serve hot or
cold.

Use a soy alternative sour cream for flourish.
