Easy Low Carb Cheese Sauce

Ingredients
1. Half a head of cauliflower
2. One cup of white cheddar cheese
3. Milk – vary depending on consistency
4. Salt – to taste
5. White pepper – to taste
Directions
1. Chop the cauliflower coarsely and place into a microwave container
2. Add about two tablespoons of water to the container to allow the cauliflower to steam
and microwave on high for 8 to 10 minutes.
3. Using a stick blender, completely blend the cauliflower until smooth. Gradually add
milk as you blend.
4. Once the desired consistency has been achieved add in the cheese. Blend until smooth
5. Add salt and pepper to taste.
6. Enjoy.
Notes
I use this to make low carb lasagne and it works very well. I find less milk is best because
thickening the sauce later is not easy.
