A family recipe
My family has the best recipe for preparing fish stew with golden rice. This
recipe was prepared for the first time 50 years ago by my grandmother in an artisan
kitchen, with fresh ingredients and a freshly caught tilapia. The first step is to mix all
the condiments and vegetables for the stew, and then mix it with a little water and salt.
The fish must be washed with water and all internal organs have to be removed to avoid
a bad taste, this was very important since some fish organs have a bitter taste. The rice
is cooked with water and spices such as spinach and cilantro, and then cooked with the
golden color to add flavor and color to the rice. Finally, the fish is cooked with the
condiments and the vegetables and the result is a fish meat, soft, with an incomparable
flavor, and very healthy, that is served separately with the golden rice.
