Draught Guinness casks have two compart:
ments. The large one is for Guinness while the
smaller compartment stores the pressure to push
the Guinness out of the cask when the tap is
‘opened, When empty, the casks are returned by
road and rail; they are transferred by fork-lift
trucks to the filling lines and, after thorough clean-
ing and refiling, they are sent out again all over
the country,
Each outlet is fully briefed on every aspect of
storing and serving Guinness to make sure that
every customer gets only Guinness at its best. They
are told that, to serve the perfect pint, they must
hold the glass at an angle of 45° below the tap
nozzle; straighten the glass as it fills from the
nozzle carefully kept clear of the beer; release the
tap when the glass is full; let the head form
naturally a the glass is handed to the customer
and that’s where you came in.
