Work instruction

● Take part of the fresh egg for example 30 % of the quantity.

● ‫ ﺍﺯ ﻣﻘﺩﺍﺭ ﻣﺟﻣﻭﻋﯽ‬%30 ‫ﻳﮏ ﻗﺳﻣﺕ ﭘﻭﺩﺭ ﺗﺧﻡ ﺭﻩ ﮔﺭﻓﺗﻪ ﻣﺛﻼ‬
● If total fresh egg is 100 kg, we will eliminate 30 kg from the total.
● ‫ ﮐﻳﻠﻭی ﺁﻧﺭﺍ ﺟﺩﺍ ﻣﻳﮑﻧﻳﻡ‬30 ‫ ﮐﻳﻠﻭ ﮔﺭﺍﻡ ﺑﺎﺷﺩ‬100 ‫ﺍﮔﺭﻣﺟﻭﻋﻪ ﭘﻭﺩﺭ ﻓﺭﻳﺵ‬
● We will apply the following formula:
● ‫ﻓﻭﺭﻣﻭﻝ ﺫﻳﻝ ﺭﺍ ﺗﻁﺑﻳﻕ ﻣﻳﮑﻧﻳﻡ‬
30 / 4.5 = 6.650 kg Egg powder + water 23.350 kg (in addition to the water quantity in the recipe).

● If all process goes well, you can increase the powder gradually by 5 % till you satisfied with the
result.
