1. Lựa chọn giống

- Phân lập vi khuẩn Lactobacillus sakei từ các nguồn khác nhau
- Sàng lọc khoảng 20 chủng, dựa trên hoạt tính sinh học bao gồm:
o Hoạt tính kháng khuẩn có hại
o Hoạt tính phá biofilm
o Tác dụng trên mô hình in vivo (viêm xoang)
o Độc tính cấp
o Độc tính bán trường diễn
o Hoạt tính điều hòa miễn dịch
o Hoạt tính chống đái tháo đường
o Khả năng chịu acid
- Lựa chọn chủng có hoạt tính sinh học tốt, có khả năng ứng dụng cao
2. Chuẩn hóa nguồn chủng
- Định danh bằng các công cụ vi sinh, hóa sinh, sinh học phân tử
- Đăng ký bản quyền chủng giống
3. Hoàn thiện quy trình nuôi cấy
