Cheddar Cheese Puffs

This is a recipe for a very basic cheese puff. You can add green onions and or any spice
that you think might go well with the Cheddar cheese. Any kind of high quality melting
cheese can be used for these puffs. Gruyere is a great choice, as well.

1 cup water 1 cup all-purpose flour


1 stick unsalted butter, room temperature 4 large eggs, room temperature
½ teaspoon Seasoned Salt 1 ½ cup shredded high quality Cheddar
1 ½ teaspoons dry mustard cheese or Gruyere
¼ teaspoon cayenne pepper

Preheat oven to 375. Line (2) two baking sheets with parchment paper. In a medium
heavy bottom saucepan, combine the water, butter, salt, mustard, cayenne, and bring to a
boil. Turn off the heat and add the flour. Stir briskly with a wooden spoon until the dough
starts to pull away from the sides of the pan and forms a mass. Add the eggs 1 at a time,
mixing well after each addition. After all the eggs have been incorporated, add in the
cheese. Add to a pastry bad and pipe about 1 ½ inch circles on the lined baking sheet.
Repeat this process leaving about 1 inch between the puffs. Bake until lightly golden
about 25 minutes. Remove from the oven, and serve immediately or turn off the oven and
open the door slightly to keep puffs warm for about 1 hour.
Yields: 32 puffs
