a. According to the results the table on the concentration of micro-organisms in Conc


(log10 UFC/g), how long it is expected that the Brochothrix thermosphacta, extent a
concentration of 7.66 log CFU/g?

R=/ In 20 hours Brochothrix thermosphacta reaches a concentration of 7.66 log CFU / g

b. Specify the length of time in which maintains a constant concentration of microorganisms


in Conc (log10 CFU/g)?

R=/ In 171.8 hours the microorganisms remain constant from 27.8 hours to 199.6 hours.

c. To maintain the conditions given, if it is the only change to lower the temperature of
20ºC to 10ºC, and 20ºC to 5ºC the number of Brochothrix thermosphacta will
increase in the number of UFC/g.

required for the microorganisms under certain conditions to be multiplied by two;
Taking into account the above, how much time is required to double the number of
micro-organisms, in each of these three cases?. Analyze and conclude with
arguments the obtained data.

At 20 ºC it takes 11.2 hours to double the microorganisms:
