An easy and delicious chicken rice dish for days when you're craving home-cooked
goodness, but don't have the luxury of time.
This chicken rice cooked using the rice cooker cannot be any easier. It is literally just
throwing everything into the rice cooker and let it do all the work. A definite keeper,
this recipe is a great lifesaver especially on busy week days when you look forward
to some homecooked meal yet you just don't have the time or energy to cook.
Serving: 4 people
Difficulty: Easy
Preparation time: 30 minutes
Cooking time: 30 minutes
Ingredients:
2 chicken legs, cut into 810 chunky pieces, skin on
1 knob ginger, smashed
3 pips garlic
2 cups rice, rinsed
3 cups water
Condiments:
A handful of spring onion, roughly chopped
A handful of coriander, roughly chopped
1 knob of ginger, grated or minced
1 tbspn sesame oil
1 tsp chicken stock powder
Salt and pepper
Method:
1. Put the rice and water into the rice cooker. Add in the ginger and garlic, followed by
the chicken pieces, skin down. Cover and cook.
2. In the meantime, assemble the condiments. Adjust the taste with salt and pepper,
or add extra sesame oil and chicken stock powder if preferred.
3. Once the Cook button has popped up, leave it for another 10 minutes. Serve
immediately with the condiment.
