EASY PICKLED PEPPERS

An easy recipe for making a small batch of pickled peppers


for adding to salads, sandwiches and pasta dishes.

INGREDIENTS

• 8 ounces mini sweet peppers


• 1/3 cup thinly sliced onion (about 1/2 of a small onion)
• 3 garlic cloves
• 1/2 cup pitted kalamata olives
• 1/4 cup extra virgin olive oil
• 1 cup white vinegar
• 1/2 teaspoon kosher salt
• 1/2 cup fresh orange juice
• 1/4 cup fresh lemon juice

INSTRUCTIONS
1. Add peppers, onion, garlic cloves, olives, olive oil, vinegar, and salt to a saucepan.
Bring to a simmer. Simmer for 20 minutes, or until peppers are tender.

2. Remove from heat, stir in orange juice and lemon juice. Cover and let totally cool.
Transfer to airtight container(s) and place in refrigerator and chill for at least 4
hours. Keep refrigerated until ready to serve.
