Vitamin C or ascorbic acid is a pharmaceutical ingredient used as an
antioxidant. Ascorbic acid in pharmaceutical materials determined by iodometric titration method or UV spectrophotometry at a wavelength of 265 nm. Absorption at 260 nm wavelength can absorb maximum absorbance at ascorbic acid so in the next measurement carried out at a wavelength of 260 nm for the sample. Vitamin C levels obtained by converting absorbance data in table 2 into the concentration obtained by respectively of 4,478; 4,478; 4,434 ppm and obtained an average of 4,463 ppm or 0.4463% b / b. Ascorbic acid which are recommended for consumption of around 45 mg / day for 40 g of fresh chili. Vitamin C which are needed if the consumption of large red chili is 1000 g. Ascorbic acid content in red chili can be used in pharmaceutical industries because it is thermolabile so the consumption recommended in fresh conditions. This case showed that the uv vis spectrophotometry method can provide measurements of vitamin c levels which are almost the same as the nutritional value contained in red chili.
