Frozen Nougat with Dried Fruit

Ingredients

2 egg whites
A pinch of salt
1/4 cup (60 mL) honey
1/2 cup (125 mL) blanched almonds, toasted and coarsely chopped
1/2 cup (125 mL) whole pistachios
3 tbsp (45 mL) golden raisins
1/4 cup (60 mL) dried cranberries
6 dried apricots, chopped
4 cups (1 L) vanilla ice cream, softened

Preparation

Line 9- x 5-inch (23 x 13 cm) loaf pan with plastic wrap and set aside.

In the clean bowl of a mixer, beat egg whites with salt until stiff peaks form.

In a small saucepan, boil the honey for 30 seconds. Drizzle over the egg whites while whisking rapidly, continue beating for 1
minute.

Add almonds, pistachios and dried fruit, mixing gently with egg whites. Add ice cream and continue mixing. Pour the creamy
mixture into the prepared pan. Smooth top and freeze for 4 hours.

Turn out the nougat, remove the plastic wrap and serve sliced. Serve with the fruit sauce of your choice.
