CHAPTER 1

INTRODUCTION

1.1 Background of the Study

Entrepreneurship has been widely spreading worldwide. Every bit of a resource that people
can find is converted into an income generating product. Philippines owned a productive
land agriculturally for it has different fruits and any agricultural products planted by
industrious Filipino people. So there’s no way of worrying for the daily needs.

Therefore the researchers have found their way in producing a product from the available
resources in the locality of Bonifacio, Misamis Occidental. Fruits are seasonal and in the
recent days, Durian is available and very affordable. Based on the research, the researchers
found out that they can produce plenty of products out of the said fruit which are Durian
Jelly, Seed Food Processing, Paper and Flour. These products can serve as income
generating and can help the economic status of the people in the area.

1.2 Theoretical Framework

The researchers believe that the food products are great help economically. The
researchers come up with effectiveness of the products in the market through the given
studies and articles about its health benefits and flexibility.

Generally, Durian is consumed fresh as fruit or food products such as candy, ice cream and
durian puffs after certain cooking procedures. Durian is widely celebrated for its long list of health
benefits, which include the ability to boost immune system, prevent cancer and inhibit free
radical activity, improve digestion, strengthen bones, improve signs of anemia, prevent
premature aging, lower blood pressure, and protect against cardiovascular diseases. Some of
the more minor benefits of durian are to reduce inflammation of the joints, help thyroid health,
reduce headaches, and lower symptoms of depression, anxiety, and stress. Most of the health
benefits come from durian’s impressive vitamin and mineral content. Durian contains vitamins
such as vitamin-C, folic acid, thiamin, riboflavin, niacin, B6 and vitamin A. Important minerals
such as potassium, iron, calcium, magnesium, sodium, zinc, phosphorus are also found in
durian. It also contains nutrients such as phytonutrients, water, protein and beneficial dietary
fiber. Aside from its flesh, Durian seeds are also useful. Durian seeds are usually in a rounded or
heart shaped. Seeds colors ranged from yellowish brown to reddish brown. Although the durian seed
contains various nutrition and benefits, it is actually poisonous when raw. That is because in an
uncooked durian, it contains cyclopropane fatty acids.Those substances, while being toxic, are also
suspected to be of a carcinogenic nature, which might cause cancerous disease development later in
life. Hence, keep it mind to only consume properly cooked or processed durian seeds.
For nutrition wise, the durian seed actually possessed with nutrients like Fiber, Zinc, Calcium and
Carbohydrate. The durian seeds actually hold a high starch content. Being high in starch, many of
food technologists and scientists regard durian seeds as a potential candidate for a lot of other food
substitute .Starchy food also carries fibers, which aids digestion and avoid constipation and other
digestive problems. One of the minerals that have been postulated is highly contained in durian seed
is zinc .It holds a vital position in our body by acting as a catalyst for more than 100 enzymes in the
metabolism. The durian seeds also contain a certain amount of calcium and other healthy compounds
capable of providing nutritional intake for bone and teeth. When processed into a pulp, due to its
sticky nature, durian seeds can be used as a glue to stick building materials or household appliances.
As mentioned that durian seed is high in carbohydrate content, durian seeds hence can also be
processed into starch. This powder can be used to replace wheat flour that can be used at home to
make cakes. This powder can also be used as primary food ingredients that have a high economic
value such as glucose. Syrup-shaped glucose can be used in various industries of medicine, food,
and sweeteners. Other durian seed benefits are used for chips. High starch content makes durian
seeds can be processed into chips. Unusual durian chips you can make a business opportunity that
will provide many benefits in the future.

With all of these benefits, the products will surely be patronize. These would be effective in the food
production industry, locally, and sooner, internationally.
1.3 Conceptual Framework

The researchers conducted this study to produce Durian products that are profitable and
healthy at the same time.

First, the researchers gathered all the ingredients and materials. Second is the making of the
products by following the proper procedures. Third, is the testing of the products. Lastly,
are the final products and feedbacks from the consumers.

1.4 Statement of the Problem

a) What are other products that can be made out of durian?


b) Is the product beneficial?
c) How much is the production cost?
d) How long will the product lasts?
e) Will the product be effective in the market?
1.5 Hypothesis

a) Durian candy is the only durian product that is widely known all over the world. With
the fruit’s texture, smell and taste, the researchers thought that durian jelly would be a
good product.
b) Durian is known for having large nutritional value, so a product made out of it would
surely be very beneficial.
c) For farmers’ Institute, finding durian fruit is not hard as there is the farm owned by the
school, so, the milk (evaporated and condensed) , sugar, and jelly powder will be the
ones to be bought.

1.6 Significance of the study

The study is conducted to make use of the durian fruit that the farm of the school produces
to avoid spoilage, to develop entrepreneurship, and to produce another healthy and tasty
durian product.

Scope and Limitation

The study focuses only in the making of another durian jelly and its effectiveness in the market.
It determines the supplies and materials, and procedures needed in the making of the product.

Definition of Terms

For a clearer and better understanding, the following terms are defined:

Jelly - a sweet, clear, semisolid spread or preserve made from fruit juice and sugar boiled to a
thick consistency.

Folic Acid - a vitamin of the B complex, found especially in leafy green vegetables, liver, and
kidney.
Thiamine - a vitamin of the B complex, found in unrefined grains, beans, and liver, a deficiency
of which causes beriberi. It is a sulfur-containing derivative of thiazole and pyrimidine.

Riboflavin - a yellow vitamin of the B complex which is essential for metabolic energy
production. It is present in many foods, especially milk, liver, eggs, and green vegetables, and is
also synthesized by the intestinal flora.

Niacin - an acid C6H5NO2 of the vitamin B complex found widely in animals and plants and
used especially against pellagra.

Cyclopropane - a flammable gaseous synthetic compound whose molecule contains a ring of


three carbon atoms. It has some use as a general anesthetic.

Spoilage - the action of spoiling, especially the deterioration of food and perishable goods.

Entrepreneurship - the activity of setting up a business or businesses, taking on financial risks in


the hope of profit.
