Caramelized Onion & Chive Cream Cheese Recipe

Yields: 1½ cups (approximately)

Ingredients
1 large yellow onion, thinly sliced
1/2 cup warm water
12 oz. low-fat cream cheese (Neufchâtel cheese), softened
1 tbsp finely chopped chives
1/8 tsp salt

Directions
1. Heat a large saucepan set over medium heat. Coat with cooking spray. Add the onions and
cook until softened, about 10 minutes.
2. Add ½ cup water, cover the pan and cook until the onions are golden brown, about 15 minutes.
3. Remove ½ cup of the caramelized onions to a cutting board and chop. Let the chopped onions
cool. Reserve the remaining onions for another use.
4. Place the cream cheese in a medium-sized bowl and whip with a hand-mixer until fluffy, about
20 seconds.
5. Stir in the caramelized onions, chives and salt. Serve or store, covered, in the refrigerator.
