The pilot dairy plant gabriel of the food engineering career has been created for the purpose

of incestigation which was not used until the beginning of the first degree seminar of the food
engineering career. The present work was carried out with the purpose of developing a
methodology for the elaboration of cheese spread of Cheddar spread, and to plan it as an
alternative of production in the Pilot Plant of Lacteos Gabriel, the same that belongs to the
career of Food Engineering, Faculty of Exact Sciences and Technology of the Gabriel Rene
