VODKA 3

Definition Vodka is the result of the distillation of any kind of raw

material that contains fermentable sugar. This broad category of
raw material comprehends grain, molasses, fruit, vegetable and
many other products.
Except for various types of flavorings, vodka consists of water and
alcohol (ethanol). Vodka usually has an alcohol content ranging
from 37.5% to 70% by volume. The classic Russian vodka is 40%
(80 proof).
History The origins of vodka (and of its name) cannot be traced
definitively, but it is believed to have originated in the grain-
growing region that now embraces Poland, Belarus, Lithuania,
Ukraine, and western Russia. It also has a long tradition in
Scandinavia.
Nowadays vodka is produced all over the world using various raw
materials such as grapes, corn and many others.
The popularity of Vodka is always associated with cocktails as its
neutrality has given inspiration to many contemporary classics. Its
versatility and mixability has appealed to the majority of the
consumers, especially among the youngest one. Once understood
the potentials of this product, many brands has given emphasis to
exclusive packaging and marketing strategy, creating an aureole of
glamour and exclusivity.
Production The "still master" is the person in charge of distilling the
vodka and directing its filtration. When done correctly, much of
the "fore-shots" or "heads" and the "tails" separated in distillation
process are discarded. These portions of the distillate contain
flavour compounds such as ethyl acetate and ethyl lactate (heads)
as well as the fusel oils (tails) that alter the clean taste of vodka.
Through numerous rounds of distillation, the taste of the vodka is
improved and its clarity is enhanced.
Depending on the distillation method and the technique of the
“still master”, the final filtered and distilled vodka may have as
much as 95-96% ABV. As such, most vodka is diluted with water
prior to bottling down to the classic 40% ABV.

Filtration Filtering is sometimes done in the still during distillation,

as well as afterward, where the distilled vodka is filtered through
charcoal and other media. This is because under U.S. and
European law vodka must not have any distinctive aroma,
character, colour or flavour. However, this is not the case in the
traditional vodka producing nations, so many distillers from these
countries prefer to use very accurate distillation but minimal
filtering, thus preserving the unique flavours and characteristics of
their products.

Flavouring Apart from the alcoholic content, vodkas may be divided
into two main groups: clear vodkas and flavoured vodkas
While most vodkas are unflavoured, a wide variety of flavoured
vodkas has long been produced in traditional vodka-drinking
areas, often as homemade recipes to improve vodka's taste, or for
medicinal purposes. Flavourings include various fruit flavours,
vanilla, chocolate (without sweetener), ginger and cinnamon.
Polish and Belarusian add the leaves of the local bison grass to
produce Żubrówka (Polish) and Zubrovka (Belarussian) vodka,
with slightly sweet flavour and light amber colour. In Poland, a
famous vodka containing honey is called krupnik.

Service Vodka and tonic or vodka martini are among the most common
ways in which consumers enjoy vodka. Also its versatility has been
used for the creation of endless contemporary classics. Vodka is
also enjoyed neat or with ice, especially in Eastern Europe.

Next The vodkas available at Balthazar are only a portion of the

hundreds commercially available vodkas in the market. This
selection represents the most worldwide recognised brands as
premium choice.

42 Below This brand uses wheat from the purest fields in the world and
40% ABV New Zealand water from a volcanic spring that achieves the highest purity rating
possible. 42 BELOW is distilled near a world benchmark for air
purity, 42 degrees below the equator. Distilled four times, the
spirit is then 'washed' in spring water reducing the level of alcohol
to 6%. This cleans away any remaining impurities. It is then
distilled a fifth time to create totally pure spirit. 42 Below is a
smooth, full, grain-based vodka similar in style to vodkas
produced in Scandinavian countries, which differ from the potato
and rye-based vodkas typical of Russia and Poland.
