Healthier Mac and Cheese  NUTRITION:​ 360 calories, 16 g fat (8 g saturated) (​SERVES 4)

YOU'LL NEED 

2 cups whole wheat macaroni, fusilli, or cavatappi pasta  1⁄2 cup panko bread crumbs 
2 Tbsp butter  1 Green onion  
2 Tbsp flour  1 cup vegetable medley (frozen) (optional) 
2 cups 2% milk  Black pepper to taste 
2 cups shredded extra sharp Cheddar (30% less fat) 
1⁄4 cup Greek yogurt 

HOW TO MAKE IT 

1. Cook the pasta according to package directions until just al-dente. Drain and reserve. 
2. While the pasta is cooking, melt the butter in a medium saucepan over medium heat. 
3. Stir in the flour and cook, stirring, for 1 minute. ​Slowly​ add the milk, whisking to prevent lumps from forming. 
4. Simmer the béchamel for 5 minutes, until it begins to thicken to the consistency of heavy cream. 
5. Stir in 1 1/2 cups of the Cheddar and cook until completely melted. 
6. Cut the heat and stir in the yogurt. Add the pasta and toss to evenly coat. 
7. Preheat the broiler.  
8. Pour the macaroni and cheese into an 8" x 8" baking dish (or into individual ramekins). 
9. Top with the bread crumbs and the remaining cheddar and season with black pepper. 
10. Place on the middle rack of the oven and broil for 5 to 7 minutes, until the bread crumbs are golden brown
