ABSTRACT

Galoba fruit is one of the typical fruit of Maluku, the plant is believed to live only in the forests
of Maluku. Small-sized fruit that is shaped like a banana, and it is black. Utilization galoba
fruit in the form of butter has never been found. By him that this study intends to utilize galoba
fruit as jam that has a taste of its own. The purpose of this paper is to learn that galoba can be
processed into jams and determine the processing of fruit into jam galoba. Usefulness of the
research, namely to increase knowledge and insight on how galoba fruit processing.
This type of research that is testing, results showed that the fruit can be processed widened
galoba jam with detailed procedures. Fruit Galoba conclusion can be exploited and processed
into jams that have the taste and charm. The processing of fruit Galoba into jams that release
part outer skin of Galoba and to take part of the contents Fruit Galoba inserted into a container,
then wash clean Galoba inserted into bleder and add a little water to mashed fruit Galoba placed
in the mortar lead to mashed Fruit seeds Galoba which is finely placed into a pan, add water
and stir Galoba cooked using the wok to boil and the sugar incorporated little by little, stirring
constantly until thickened texture. Jam from fruit Galoba was ready to be enjoyed.
