SWEET POTATO BREAKFAST COOKIES

| Healthy & Vegan // Baking With Miles


(Slightly modified by an ex-vegan)
Cookie Recipe:

- 4 cups mashed sweet potato flesh

- 3 cups oat flour (ground oats)

-1 cup protein powder (IRON VEGAN)

- 4-6 heaped TBSP smooth almond butter

- 2/3 cup crushed pecan nuts

- 6-8 TBSP maple syrup

- 4 tsp ground cinnamon

- 2 tsp vanilla extract

- 2 tsp baking powder

- 2 pinches of salt

- 1 cup water or plant milk to mix :)

- makes 12-16 large

- ginger powder… (as much as you wish: 2tbs spoons?)

-vegan chocolate chips… ( a few)

-a fruit grated (for added sweetness)

- bake for 35-40 mins at 425 degrees F.

(These will be semi soft cookies… as longs the outside is slightly hard)
