Mom’s chili recipe

Ingredients

2 tbsp of canola oil


1 15oz can pinto beans
2-3lbs ground beef (or turkey)
1 celery stalk diced
1 medium onion diced
1 green pepper diced
1 ¾ cups water
28oz can of crushed tomatoes, drained
8oz can of tomato sauce
6oz tomato paste

Spices:

3 tbsps garlic powder OR 6 cloves of garlic chopped


2-3 tbsp chili powder
2-3 tbsp ground cumin
3 tsp oregano leaf
3/8 tsp cayenne
2 bay leaves
3 tsp salt
Masa (masa is 2 tbsp of cornstarch with ¼ cup of COLD water – mixed until smooth)

INSTRUCTIONS

Heat up frying pan to medium high and sear the ground meat until all the pink is gone
Drain off excess fat from meat and set meat aside

In a large pot, heat up the vegetable oil and then sauté the celery, green pepper and onion
for 5-10 mins (until onion is translucent). Then add the meat into the pot and stir.

Add in the water, the crushed tomatoes, tomato sauce and tomato paste and heat until
bubbly.

Add in all the spices plus the masa and continue to heat for 30 mins.

Then, turn the burner down to simmer or low, so that it’s bubbling at a very low level,
and leave on stove for about 2-3 hours, stirring once an hour or so.

Really good with cornbread, and then you can add to the chili when you eat it cheese,
scallions, more onions if you want.
