Opening Check-list

 Put all chairs on tables


 Sweep thoroughly
 Mop using murphy’s wood soap
 Fill red sanitizer bucket
 Put chairs down, wipe down tables and chairs
 Reset tables for service (check silverware & glasses for water spots)
 Set up polishing table in the back (2 polishing cloths, pan)
 Set up server station (one trash pan, one for sanitizer cloths, one for ice scoop)
 Fill ice container
 Fill water bottles (1/2 for slow night, all for busy night)
 Take family meal to back put in appropriate containers, date, label, place on top left shelf in walk-in
 Check Iced tea and creamer (if 4 days or older dump, make new)
 Check ground coffee, if ½ full grind more (*thoroughly clean coffee grinder and area when finished)
 Wipe down banquettes dining and bar room, make pillows look nice
 Clean windows using window cleaner
 Set bar for service (if no host)
 Fold Linens

Side Work when slow

 Wipe down table and chair legs


 Wipe down baseboards
 Clear shelves at server station & wipe down the shelves
 Wipe all subway tile
 wipe down ledge in the bathroom hallway
 Clean & reset the PDR
 Sweep patio (during summer season

On-going Side work

 Polishing silverware and glassware


 Check bar for glassware
 Check bar for full bus tub
 Keep the server station neat and orderly
 Take menus back to host stand
 Pre-bus tables
Closing Check- list

 Unset all the tables


 Wipe down all tables and chairs
 Pull out chairs & spot sweep the dining room
 Unset server station
 Melt the left-over ice
 Empty remaining water bottles
 Wipe down server station
 Take the sanitizer bucket to dish***
 Empty trash at server station***
 Do a last check at bar for full bus tub and glass racks
 Polish all remaining glassware and silverware
 Break down polishing table, place in back room
 Check out with MOD
