• One bottle (750 mL) of red wine (suggestions:

Cabernet Sauvignon, Zinfandel, Merlot, or Shiraz)

RECIPE 1

• 1/4 cup of brandy
• 1/3 cup honey or sugar*
• One peeled and sliced orange (keep peel to add zest
to taste into cooking pot)
• 3 cinnamon sticks
• 8-10 cloves
• 1 tsp fresh or 2 tsp ground ginger (allspice can be
substituted)

combine all ingredients in either a large pot or a slow


cooker.
Gently warm the ingredients on low to medium heat
(avoid boiling), for 20-25 minutes.
Stir occasionally to make sure that the honey or sugar
has completely dissolved.
When the wine is steaming and the ingredients have
been well blended it is ready to serve.
Ladle the mulled wine into mugs (leave seasonings
behind) and enjoy!
* The 1/3 cup of honey or sugar does make a sweeter-
styled mulled wine, feel free to cut honey/sugar down
to taste.

RECIPE 2
2 oz brandy (optional)
1 cup clear apple cider or cranberry juice
4 Tbsp honey
2 fresh rosemary, plus extra for garnish
1 orange, sliced
3 cinnamon sticks
3 whole cloves
3 whole star anise
3 whole peppercorns

Slowly bring all ingredients except brandy to just


below a simmer.
Keep below a simmer for 20 minutes, then stir in
brandy (if using) and serve, garnishing each glass with
a sprig of rosemary

RECIPE 3

150g castor sugar


1/2 cup orange juice
peel of one lemon
peel of one orange
1 cinnamon stick
5 cloves
1 star anise
1 tsp fresh nutmeg
pinch of ginger

Place all ingredients except the wine into a large


saucepan and place on medium heat.
Add just a small glug of red wine to the pan to ensure
the sugar is covered and let it cook for 4-5 minutes
until it becomes thick and sticky. This should let all the
spices infuse well.
Once the mixture has become sticky enough, add the
rest of the wine and turn down the heat.
You don’t want the wine to boil otherwise all the
alcohol will evaporate!!!
Let cook for 5 minutes and serve hot with slices with
fresh orange.
