➢ MASALA & SPICES POWDER

Masala are one of the important spices consumer products for daily
uses. Masala are of single varieties in Veg and no added of Non-Veg. The important
Masala in India are Sambar Powder, Rasam Powder, Puliogare powder, Daniya powder,
Chilly Powder, Turmeric Powder, Chicken
Masala, Mutton Masala & Garam Masala .
Masala are one of the earliest
commercial products appeared in the
market.
Sophistication and subtle use of some herbs
& spices characterize Indian food and Indian
cuisine. These spices play a very important
role in Indian cooking. If there are no spices,
it’s not Indian food. We Indians have a habit
of spicing up our food to make it more hot and tasty. Some of the spices are required for the
aroma, some for flavor and some for complimenting other spices.
Spices are defined as “a strongly flavored or aromatic substance of
vegetable origin, obtained from tropical plants, commonly used as a condiment”. Spices
were once as precious as Gold. India plays a very important role in the spice market
of the world. In ancient times majority of the spices were produced in India and exported
world wide. It was then, the spices of India attracted people across the borders and forced
them to come to India for Spice trade.

Masala is a word very


commonly used in Indian cooking and is
simply the Hindi word for “spice.” So,
whenever a combination of spices, herbs and
other condiments are ground or blended
together, it is called masala.

The Indian spices can be categorized into three main
categories:

• The basic spices

• Complimentary spices

• Aromatic or secondary spices

1. The Basic spices:


There are a few basic spices in Indian
cuisine that go into most dishes. Often a very
basic vegetable dish is made by adding
cumin or mustard seeds and asafetida in some
hot ghee (clarified butter) or oil until they sizzle
and pop. Then the vegetables are added and
steamed.

2. Complementary spices :
Spices like fennel or nigella seeds are sometimes
added along with some of the basic spices to add to
flavours. These are used in combination with the basic
spices and aromatics mentioned below according to the dish
being prepared.

LALITHA’S.U MASALA company is a family owned business. The company is


been offering a successful operation and holds a special place in markets across Karnataka in
short period of time.

It had a humble beginning in 2017 When its Managing Director, Mr.VENKAT


NAIK, is being promoting and marketing homemade masala products in adjoined markets in
Davangere. There is something special in the recipe that made it an instant hit. So, thus was
born the brand, “LALITHA’S.U MASALA”.

BACKGROUND OF LALITHA’S.U MASALA INDUSTRY

The LALITHA’S.U masala in rural industry is been established in the year 2017
Mr.Venkat Naik The manufacturing and packing unit is located in the center of the city which
helps them into marketing and collecting the goods through market .
When the industry started in 2017 they were manufacturing only 6 types of
Masala products i.e., chicken masala, mutton masala, sambar powder, chilly powder, turmeric
powder and daniya powder. But after sometimes they also Started to manufacture different
types of Masala by using other spices content like daniya , ground nuts , jaggery, etc, which
are also easily available in the region at reasonable rates. In the initial stages, the
LALITHA’S.U masala a rural industry faced many problems like Labour, Raw-materials etc,
which a small-scale Industry is bound to be faced. But after some time it succeeded in
overcoming all the hindrances, which came one after one, across in its progress. And the
industry today it is developing in manufacturing masala in the name of LALITHA’S.U
which are in qualities and in reasonable price. LALITHA’S.U masala, are available in

Karnataka and also go the permission to sell the masala to other states of the country and
abroad.
Started this business as a small scale industry. He is responsible for overall
development of the business. The Primary aim or object was to manufacture and market
masalas of various types with the brand name LALITHA’S.U.

NATURE OF MASALA

Spices are the dried form of various seeds, roots, fruits, barks, vegetables, and
other plant substances primarily used for coloring, flavoring, and preserving the food.
• They are found everywhere in the world and form an essential part of the culinary practices
of all the cultures. Their original use was as a flavoring agent, which then
demonstrated antimicrobial properties by keeping the food fresh for longer durations and
improving the health of those who ate them regularly.

• One of the best things about spices is that when prepared, dried, and stored properly, they can
last almost forever.0

• Also, since they are so low in calories, being ground up in tiny forms, there is no danger of
any side effects. In fact, they contain proteins and organic compounds that are necessary for
overall health.

• Bitter spices are believed to have an acquired taste.

• Spices that are considered bitter are bay leaves, fenugreek seeds, horseradish, mace, cloves,
cumin seeds, etc.

FSSAI it means “FOOD SAFETY and STANDERD AUTHORITY OF INDIA”.

FSSAI LICENSE:

FSSAI License is issued by the Food Safety and Standards Authority of India (FSSAI),
Ministry of Family Health & Welfare, Government of India. Application to commence a food
business must be made to the FSSAI in the prescribed format. Based on the application and
supporting documents, FSSAI will accord approval. The Food Safety and Standards
(Licensing and Registration of Food Businesses) Regulations 2011introduced to improve the
hygiene and quality of food has brought about tremendous changes in the food industry. As
per the Act, no person shall commence or carry on any food business except under a FSSAI
license or FSSAI registration. Therefore, any food manufacturing or processing or packaging
or distributing entity is now required to obtain a FSSAI License or Registration.

POLLTUION CONTROL:
There is no major pollution problem associated with this project in terms of air and sound
pollution except for disposal of waste water which would be managed appropriately through
recycling facility. However, entrepreneur should obtain NOC from concerned State Pollution
Control Board.

EFFLUENT DISPOSAL:
Disposal of any effluent out of the project unit should be treated with recycling facility or
dumped in such a way that these does not cause hazard in the vicinity of the site.

ENERGY CONSERVATION:
Adequate care should be taken in electrical installations and optimal utilization of machinery

is very essential as to maintain the fresh of food, all the containers, pipes and other equipments in
QC are washed with hot water before starting off with new quality check. There are many tests
conducted here.

The McKinsey 7S Framework is a management model developed by well-known


business consultants Robert H. Waterman, Jr. and Tom Peters in the 1980s. This was a
strategic vision for groups, to include businesses, business units, and teams. The 7 Ss are
structure, strategy, systems, skills, style, staff and shared values.
The model is most often used as an organizational analysis tool to assess and monitor
changes in the internal situation of an organization.

functional structure of LALITHA’S.U MASALA is appropriate for an organization with

1. ADMINISTRATION DEPARTMENT

The administration department controls the overall functioning of the


organization. The organization consists of the following 3 levels.
1. Managerial level includes managing Director, Deputy manager, Assistance manager.
2. Supervisory level included technical officers and supervisors.
3. Workers level includes labours and helpers.

▪ Time keeper:-
This department records the working hours of the employees. Time machine shows the
entry time and exist time of each employees the workers decided into different shifts control
the working of the department. Each employee are authorized for MACHINE, whenever an
employee enters the promise he has to punch finger in the time machine and before living the
premise he has to do the same based on this attendance, canteen bills are charged, wages are
fixed and deduction are made.

union. It prepares budget every year and financial rules for receipts and payments are framed.

Stores department helps the production by supplying adequate raw materials purchased
under E-procurement of Government of Karnataka. The stores department maintains the

● It tries to maintain maximum and minimum level of inventory so as to avoid blockage
of capital and storage.
● Ordinary and local available commodities are maintained at minimum possible level.

LEARNING EXPERIENCE

What I’ve learned:

➢ I’m not alone: Coming into this position, I felt that I had no idea where my career
was going and I lacked confidence about what I could do and what I am really good
at. My internship has definitely given me a better understanding of my skill set and
where my career may take me, but most importantly, I’ve come to learn that I am
not alone.
➢ This job has taught me that almost everybody is in my same position. Very few
college students know what they want to do, and it is something that is simply not
worth worrying about. Thanks to my I know that if I continue to work hard things
will fall into place.
➢ The environment here at Experience is quite relaxed, yet it taught me how to
behave in the workplace.
➢ Simply working in the office and getting used to everything here has definitely
prepared me for whatever my next position may be.
➢ Just observing the everyday events has taught me more about teamwork, and how
people can come together to get things done.
➢ Although sometimes I have to remind myself to use my inside voice, I feel I’ve
adapted to the office life relatively well.
➢ I have learned the organization structure of the company and also all the
functional departments of the organization.
➢ I came to know the process of manufacturing paper products and also the
financial conditions of the company.
➢ I studied many practical aspect as compared to theoretical aspects and it is also
exposed me about working of an organization, to relate the theoretical concepts
learnt in the classroom to organizational functioning, decision making crotalarias
and real life application of management.
➢ I have got the practical orientation of the functions of the various departments
of the company. And I was able to analyse the performance of the company.
➢ I understood the application of theoretical concepts into business decisions in
the organization.
