1 teaspoon bicarbonate of soda
1/2 cup buttermilk
1 cup mashed bananas
Cream butter and sugar very well. Add eggs; beat well again.
Sift dry ingredients together and add to creamed mixture
alternately with the liquid. Stir in bananas.
Pour into a greased and floured 23 x 13 x 7 cm loaf pan. Bake in
180C (350F) oven for 1 hour. ( This loaf may also be baked in a

2 extra large eggs
250ml (1 cup) soft brown sugar
125ml (1/2 cup) oil
500ml (2 cups) milk
625ml (2 1/2 cups) flour
12.5mls (2 1/2 tsp) bicarb
Sm (1 tsp) salt
500ml (2 cups) bran
250ml (1 cup) dried fruit cake mix
250ml (1 cup) coconut
Set oven to 200 C. Grease muffin tins.
Sift flour, salt and bicarb together. Beat eggs till pale
yellow, gradually add sugar beating well. Add oil
while beating. Add milk and dry ingredients
alternately and mix well. Stir in fruit and coconut.
Spoon into muffin tins 3/4 full. Bake for 15 - 20
mins until cooked through.
Batter can be kept in the fridge for 1 month.
