useful things you can get from coconut, there are still other by-products that are

now commercially produced not known to many people yet.

One of these is the coconut water. Coconut water is normally thrown by

the copra processors, except when they drink it like ordinary water. But this is the

primary ingredients as sweetener substitute for coco sap or “tuba” which is being

used as coco sugar. Coconut water also has the amazing health benefits. It was

only recently discovered that coconut water can also make a tasty and delightful

condiment that can even be turned into an income-generating resource. In fact

many coconut farmers today still discard this fluid when they do copra production

(Ediriweera 1996).

Recent studies have found that coconut water can make a very good

substitute for the soybean-based sauce. “Toyo” is one of the primary

ingredients that make our cooking desirable. Aside from being healthy, coconut

sauce, or coco toyo, does not necessarily have to contain preservatives; and it

can last for around six months. It also does not require any additive to enhance

its flavor because its natural taste is delicious enough. Coconut water is a
refreshing and cooling drink. Its sodium and potassium content makes it an ideal

drink for rehydration. In a healthy, undamaged coconut, the water is even sterile

(Jackson, et al 2004).

Nowadays, people are getting conscious with regards to their health. In

facts, most of them are being choosy on what foods they will eat.

Therefore, the researchers wanted to study the product of sauce where

everybody would love to eat at the same time, cheaper and good for their
