Italian herbs roasted whole chicken with tomato rice

INGREDIENTS
1 Whole Chicken – skinless
6-8 tablespoon Olive Oil
1 tablespoon Ginger Paste
1 tablespoon Garlic Paste
1 tablespoon Oregano
1 teaspoon Basil
1 teaspoon Rosemary
1 tablespoon Lemon Juice
½ tablespoon Dry Pepper Flakes
1 tablespoon Vinegar
Salt to taste

METHOD
1. Wash the chicken thoroughly
2. Place diagonal cut on to flesh
3. In a dish, mix all the ingredients except the lemon and make a marinate
4. Thoroughly rub the chicken with the marinate, making sure its fully coated, then add lemon juice on top
5. Leave to marinate for at least 1 hour
6. Preheat the oven
7. Place a non stick roasting tray in the oven and heat for 5-7 minutes
8. Remove the tray and add gulp of oil to coat the tray
9. Place chicken on the tray and top with the remaining marinate in the dish
10. Place in oven
11. Roast till the chicken is done to your preference, turning occasionally and basting with the marinate
12. Serve immediately
TOMATO RICE
INGREDIENTS
2 Cups Rice
3 Tomatoes - Finely chopped
3 Cloves Garlic - crushed
4-5 tablespoon Olive Oil
2 tablespoon Butter
1 tablespoon Coriander Seeds
2 tablespoon Concentrated Tomato Puree
3 Cups Chicken stock
Salt to taste
METHOD
1. Wash and then soak rice in plenty of water for at least 20-30 minutes
2. Heat oil and butter in a pan
3. Add onions & garlic and Saute - do NOT let them brown just translucent
4. Add the chopped tomatoes, corinder seeds and the paste and reduce the heat and let it simmer to a thick
sauce
5. Drain and add the rice
6. Mix with light hands
7. Add hot stock and mix
8. Let it cook till the water is absorbed and rice is cooked
