SHENGOLI

AYURVEDIC COOKING - Ayurveda is a wellness practice that originated in India and is about 5,000 years
old. The word "Ayurveda" is a combination of two Sanskrit words that mean life (Ayur) and science
(Veda), Ayurvedic dietary habits are built on the principle of awareness to create balance in food
and the person consuming it.

Ayurvedic Dietary Habits also emphasize the purity of a person preparing the food, place in which
it is being prepared, purity of the ingredients being used and also the purity of the person eating
it. eating food is considered an activity equivalent to praying to God. Ayurveda focuses on balance
in food and the person consuming it by the principles of Dosha.
The team of Culinary Academy of India present our dish 'SHENGOLI' prepared using 'one pot cooking
method' that ensures no loss of nutrient value from the ingredients used. Ingredients like Horse
Gram, Jowar are used. Horse Gram is known for its many health benefits due to its low Glycaemic
index thereby helping in controlling diabetes, lowering cholesterol etc. This dish is consumable on
its own without the help of any accompaniments.

INGREDIENTS:
HORSE GRAM FLOUR – 100 GRAMS JOWAR FLOUR – 25 GRAMS SALT – TO TASTE
RED CHILLI POWDER – 10 GRAMS GARLIC PASTE – 15 GRAMS MUSTARD – 5 GRAMS
TURMERIC – 5 GRAMS JAGGERY – 10 GRAMS SEASONAL VEGETABLES – 30 GRAMS
METHOD:
SIFT HORSE GRAM FLOUR AND JOWAR FLOUR.
ADD GARLIC PASTE, SALT, CHILLI POWDER, TURMERIC AND WATER, MIX TO MAKE A SOFT DOUGH. And SHAPE
THE DOUGH AS DESIRED.
HEAT OIL IN A MUD POT AND TEMPER MUSTARD SEEDS. ADD GARLIC PASTE, CHILLI POWDER, TURMERIC SALT.
ADD JAGGERY, SEASONAL VEGETABLES. ADD THE DOUGH AND ONCE COOKED SERVE HOT.
