Characteristics -Black grape, think skin, temp - cool to moderate climate, Color- pale to medium, high

acidity, low tannins, and flavors of red fruits - strawberry, raspberry, red, cherry that range from fresh to
cooked depending on ripeness. Subtle oak derived aromas of (smoke & clove). Some good ones develop
complex tertiary flavors (forest floor, mushroom) in bottle.
Wine making and maturation – mostly made as a single varietal wine (exception sparkling like
champagne). Matured mostly in older and larger oak barrels vs newer and smaller barrels so the delicate
flavors are not overwhelmed.
