Cheese is a processed food product made from cow's milk or other mammal milk such

as sheep, goats, buffalo, reindeer, camels, and yaks. Cheese is one of the highly nutritious milk
products produced from the process of coagulating protein in milk to form the curd. The basic
ingredient of making cheese is milk. Milk is one food that has a high nutritional value, one of
which is protein. In Indonesia, the most commonly used milk as a basic ingredient in making
cheese is cow's milk.

However, some people do not consume cow's milk because of allergies and the
expensive price. Cow's milk can be replaced by milk from legumes such as soy protein with
high protein so that the protein needs in the body can be fulfilled and also can be consumed by
vegetarians. Making cheese also uses several materials, such as starter cultures, coagulants and
rennet and other additives that are added to cheese to make cheese of the desired quality and
type. One type of additional ingredient in cheese is an emulsifier which is used as a binder to
the components of the material and improves textures. Some agents of emulsifying is gelatin
and carrageenan. Making cheese is made with several steps such as treatment of milk, starter
culture addition, coagulation, curdling, flavor addition, compression of curd, and ripening and
aging. Various techniques are carried out to get the desired cheese.

One type of cheese that is in great demand today is mozzarella cheese, also called fresh
cheese. Mozzarella cheese is cheese that is commonly added to foods as a topping and lasagna.
Mozzarella is soft cheese which has a water content of 48.59% and 20% protein. The ingredient
commonly used in making mozzarella cheese as an emulsifier is Gelatin. Gelatin is a protein
compound derived from collagen from animal tissues, such as the skin, bones, and tendons. As
an additional ingredient in making cheese, gelatin is often questioned halal, because the most
widely available gelatin is made from pigs that are not permitted by Muslims
