[1]According to Laca,G(2020) kakanin is a native delicacy that is available in the country.

Every province in the country has its own specialty of kakanin . It can be just made up of glutinous

rice (malagkit ), coconut milk, and sugar combined. The history of kakanin is rich as its flavour.

Many say that every kakanin represents every culture of Filipinos. In all its mouth-watering forms-

is not just a local delicacy meant to boast the versatility of the Filipinos' staple food, rice or

"kanin" (from which the term itself is derived). It is an essential slice of the Philippines' rich food

culture; a piece of the country's history and the Pinoy palate's identity. These days, the term

"kakanin" doesn't necessarily refer to something made only with malagkit (sticky rice). Treats

made with gata (coconut milk) or locally-grown root crops are now considered kakanin, too.

Various methods of preparing it have also been discovered and introduced.

[2]The cultural importance of the original Dolor's Kakanin (2008) F&B Report Magazine.

that they apply on to special occasions that Filipinos enjoys the kakanin while conversing with

[3]According to Laca,G(2020) Filipinos love to eat and they especially love to eat Filipino

food. When it comes to answering the question about what Filipinos will not want to eat without,

the answer is rice. Rice is the most common staple food in the country, followed distantly by bread.

Filipinos loves to eat rice. We cannot simply hide the fact that we eat rice from the start of the day

up to the end of it. We also eat rice sometimes as snacks or merienda in a form of rice cakes that

is known for its sweet sticky form. This study presents the role of rice onto Filipinos’ citizens that
feels different to eat without rice, it’s because rice has a big role onto Filipinos’ culture and food

history.

[4] According to reclaiming the vanishing tradition of Filipino merienda, (2020), these

native Filipino pastries or sweets, cooked into bibingka, puto bumbong, palitaw, ube halaya, etc.,

are all part of our glorious and rich Filipino tradition of the afternoon merienda, or snack time as

it may be known in America, or tea time in Europe. But increasingly, this noble tradition is being

lost because of the constraints of our fast-paced lives. It is easier to grab a bite from fast-food stalls

and coffee houses in the middle of the afternoon. The labor-intensive and ceremony-filled

preparations of native kakanin are slowly being supplanted by the quick and painless food-to-go

industry. Mobile applications are one of the methods that fast food chain like Clyde’s bread and

pastries use in order to reach out their products that slowly killing the essence of Filipino marienda

that are usually made out of scratch or bought from vendors that are selling rice cakes from the

streets at noon. This study presents that the marienda tradition in the Philippines are slowly fading

away as the years go by because of the time, trends for Filipino delicacies dropped because of

international fast food chains that is much faster to have than bearing to wait every single noon of

the day to have the your desired rice cakes.

[5] According to Juan's Kakanin(2014) Palitaw: Origin and Benefits Palitaw , a Philippine

dessert and snack made with simple rice flour dough that is boiled and then coated in coconut and

sesame seeds. The small, flat rice cakes are traditionally eaten during holiday festivities but can be

enjoyed at any time. The texture of the finished cakes can range from very moist and delicate to

chewy and rubbery, depending on the preferences of the cook. Although there are a few variations,

the palitaw is usually prepared according the same basic recipe without any changes. It is similar

to other types of sweet, cooked rice cakes that are produced in countries such as Japan and South
Korea. The rice used for palitaw is traditionally glutinous rice, also called sticky rice or malagkit

in the Philippines. An authentic preparation involves cracking the dried sticky rice and then

soaking it overnight in water. After soaking, it is ground down into dough with water being added

as necessary. If this method is being employed, the rice nearly always requires soaking in water

before being used, sometimes to soften the very thick shell around the rice and other times to

remove some of the starch before cooking. In many countries, instead of laboriously grinding down

sticky rice into a powder or dough, bags of readymade glutinous rice flour are available for

purchase. The premade flour is actually the preferred method for making palitaw at home. It is not

necessary to use sticky rice for the recipe, meaning regular rice flour can be used instead with no

real ill effects. The amount of water in the dough can help to determine what the final texture will

be. Using as little water as possible and forming hard dough will create palitaw that is chewy,

rubbery and dense. Adding extra water to create looser dough will result in cakes that have a softer

text. This study shows how to make to correctly make a palitaw in order to achieve the highest

peak of its texture and taste that will be shown onto the results if it is done correctly.

in the world. Why Philippines can’t produce enough rice to feed it people? According to the

International Rice Research Institute (IRRI), a nonprofit independent research and training

organization located in the Philippines, the three main factors explain why Philippines still imports

rice;

 Land area: The Philippines has around 300,000 square kilometers, of which around 43,000

square kilometers of harvested area are used for rice production. As most of the country is

very mountainous and consists of many small islands, suitable land is limited to expand

rice production into without affecting wetlands, forests, or areas producing other crops.

Urban areas also continue to expand rapidly.

 Population growth: The population of the Philippines is estimated at 97 million. Its annual

growth rate of around 2% – among the world’s highest – means that just to keep pace with
growing demand the country would have to increase rice production and yield at rates

rarely seen in history.

 Infrastructure: Irrigation infrastructure is not used and maintained as efficiently as it could

be, thus reducing productivity potential. Transport infrastructure, particularly good-quality

roads, is lacking in the Philippines, which affects the transport of rice and hinders the rice

trade.

[9] This study shows how rice has a big impact onto our life, most of our land is used up for

rice fields and crops that is used to feed millions of Filipinos today.
