Immersion & Immersion Pro - Overview
Immersion Pro is a solid state heat exchange system for beer brewing. It is
capable of effectively heating or cooling 8 gallons of beer to 35° F (20° C) above
or below ambient. For a list of compatible fermenters, visit:

www.brewjacket.com/compatible-fermenters

Delays
To protect your solid-state heat exchange chip, the system will wait a period of 5
minutes before moving from heating mode to cooling mode and vice versa. The
fan will continue to run while this change occurs.

Probe Placement
If you have a cooling-only Immersion (non-Pro model), tape the temperature probe anywhere on the outside of your
fermenter but inside the jacket. For Pro units, tape the probe to the outside of your fermenter at the top of the liquid
line, or in the upper ¼ of the liquid. This placement is very important during heating mode as the top of your wort will
warm up before the bottom. This lag is more pronounced with heating than with cooling because heat naturally rises
and with the heat source at the top of your fermenter, it will take a few hours for the temperature change to make its
way to the bottom of the fermenter. So, to prevent your yeast from being cooked, place the probe at the top of your
fermenter.

Dead Band and Overshoot

There is a dead band of 0.2° C, or 0.36° F that prevents your system from heating or cooling when within this range. For
example, if you set Immersion Pro to 20.1° C it will cool until it reaches 20.1°. If the temperature naturally increases to
20.3°, Immersion Pro will turn on and cool again until it reaches 20.1°. If you are not using a thermowell, expect
Immersion to overshoot your set temperature by 0.1° C as it takes a little longer for the temperature change to reach
the outside of the fermenter. If you are using a thermowell, your overshoot will be minimal. Without a thermowell,
expect a temperature range of 0.3°C / 0.5°F. With a thermowell expect a temperature range of 0.2°C / 0.36°F.

Celsius / Fahrenheit Temperature Selection

To change from F to C or from C to F, press the BrewJacket logo and the “–“ button. The display will now read C° or
F°. Use – or + to change your temperature. Press BrewJacket to save.

Calibration

You do not need to calibrate your Immersion or Immersion Pro. The included probe is accurate to 0.1° C out of the box
and Immersion Pro’s thermal sensing system is more accurate than most off the shelf kitchen thermometers. All systems
have been calibrated with a laboratory-grade instruments. If calibration is necessary, follow these steps:

Press BrewJacket and + button. Your display will flash. You can press – or + to change the calibrated temperature. Press
BrewJacket button to exit. If you need to revert to factory settings, first change the temp mode to F (see above). Fill a
cup up to the brim with ice then fill then fill the cup with cold water to the top of the ice level. Insert the probe into your
ice bath and stir with the probe for 30 seconds, or until the temperature on your head unit stops changing. A factory
calibrated head unit will read 33.4°. If your unit does not read 33.4°, calibrate the unit so it reads 33.4°.
