Red Lentil & Vegetable Soup

This soup is simple to prepare and a good source of protein and betacarotene (vitamin A)

30-40 portions 100 150

Onions, chopped 1kg 4kg 6kg


Garlic 3 cloves 1 head 2 head
Sunflower / olive oil 150ml 500ml 600ml
Carrots, diced 700g 3kg 4kg
Leeks, sliced 1kg 4kg 6kg
Potatoes, diced 2kg 8kg 12kg
Red lentils 700g 3kg 4kg
Vegetable stock 5ltr 20ltr 30ltr
… inc bouillon 100g 400g 600g

- Fry the onion for 5-10 minutes until soft.


- Add garlic and vegetables and cook gently for 5-10 minutes.
- Add lentils.
- Add stock.
- Bring to boil, cover and simmer for 30-60 minutes or until the lentils are cooked.

Easy peasy!

Optional addition:
Chopped tomatoes 750g-1kg 3kg 4kg
