Ghanaian breakfast recipe: rice water

Rice water is a Ghanaian breakfast normally served with evaporated or powdered milk. It
is similar to rice pudding but lighter as water is used in cooking.

I love rice water, it is one of my morning comfort foods. The kind I want when I don’t
want to do anything but lie on the couch all day changing channels and worry about
those house wives drama.

Warning – Rice water is not the kind of meal to have when you want to have a fruitful
day. Or it’s just me. It makes you sluggish and procrastinate the day’s plan till later.

I will save it for the rainy day

This is a lighter version of the regular rice pudding normally eaten as breakfast in Ghana.

1 cup rice
5 1/2 -6 cups water
1 teaspoon salt
½ teaspoon nutmeg
honey/ sugar any sweetener of choice
powdered or evaporated milk to serve
Dash of nutmeg for garnish optional

1. Wash rice and pour in a large saucepan with 5 cups of water and put on a high
heat.
2. Boil for about 20 minutes till the rice has soaked the water and soft. Add the salt
and the other one cup water if needed. Using a ladle, beat the rice against the
saucepan to form a smooth- pudding like consistency.

3. Add the nutmeg and sweetener of choice let it simmer for about five minutes.
4. Serve with milk of choice and sprinkle with tiny dash of nutmeg for garnish.

Soak the uncooked rice in water overnight for a very smooth porridge.
