Banana Chocolate Chip Walnut Muffins

Ingredients:
Makes 12 Servings
• 4 large ripe bananas
• 1 whole large egg
• 1/3 cup extra virgin olive oil
• 1 teaspoon of pure vanilla extract
• 1 ½ cups of whole wheat flour
• 1 teaspoon of cinnamon 5.5 g
• 1 teaspoon of baking soda 5.5 g
• 1 teaspoon of baking powder
• ½ teaspoon of salt
• 2 oz of walnut pieces (~ ½ cup)
• ½ of cup dark chocolate chips
• 6 tablespoons of hemp hearts
• ¼ cup of milled golden flax seed

Directions:

1) Preheat oven to 350 degrees F.


2) Prepare 12 cup muffin pan by lining with muffin liners.
3) In a large mixing bowl, mash bananas until mostly smooth.
4) Add egg, olive oil, and vanilla to bananas and mix to combine.
5) In a separate bowl, combine whole wheat flour, cinnamon, baking powder,
baking soda, and salt. Mix thoroughly.
6) Gently stir dry mixture into the wet mixture until combined
7) Fold in walnut pieces, dark chocolate chips, hemp hearts, and flax seed.
8) Distribute batter into muffin tins.
9) Bake at 350 degrees for 20 minutes and allow to cool before removing
from muffin pan.
