WATTLESEED PUDDING
2 tablespoons boiling water
| tablespoon watlleseeds
Ys cup seltraising flour
1 tablespoon cocoa
40 grams butter
4 cup brown sugar
1 egg, slightly beaton
% cup milk
SAUCE
¥% cup brown sugar
| tablespoon eocoo
% cup boiling water

METHOD
1 Pour boiling water over the watleseeds ond soak
for 10 minutes, Sirain through a fine sane. Retain
the wattleseed grounds.
2 Preheat oven to 180°C. Grease two individual
ovenproof romekins
3. Sift the flour and cocoa into a medium bow
4 Croom the butter and brown sugor uni light and
fluffy.
5 Add the egg gradually a tablespoon at a time and
slic until well combined.
6 Stir n the sifted flour and cocoa mixture
alternately with the milk, Gently slr through the
relcined wattleseed grounds.
7. Divide the pudding mixture evenly between two
ovenproof ramekins.
8 To make the sauce, mix he brown sugar and cocoa,
Sprinkle over the top of the puddings, Pour the
boling water genlly over the top ofthe puddings.
9 Boke in the preheated oven for approximately
25 minutes until he puddings have risen and fee!
