Cheesy zucchini macaroni recipe

Ingredients (4-6 portions):

- 1 onion, diced
- 2 zucchinis, diced
- Butter or oil to grease pan
- 1 tsp of curry powder
- 1 clove of garlic, diced
- 1½ tsp marjoram
- 250 ml milk
- 1 red bell pepper, diced finely
- 100 g bacon, cubed
- 100 g cream cheese
- 500 g macaroni pasta
- 150 g aged cheese, grated
- Salt & pepper to taste

How to make:

Heat up the pan, add the butter or oil and the curry powder. Fry for 3 minutes, until onion is
translucent. Add the garlic, zucchini and marjoram and simmer for 15 minutes. Fry the bacon until
crispy and boil the pasta according to the packaging instructions. Blend the zucchini-onion mixture
until smooth and add the milk. Add cream cheese, grated cheese, bacon and bell pepper to the
zucchini sauce and simmer for another 3 minutes. Season to taste. Serve the sauce over the cooked
pasta.
