SAUCE:
1 14.5 oz can crushed tomato--no extra spices
1/4 tsp salt plus more for taste
pinch of baking soda ( only if sour)
4 oz smoked bacon or smoked pancetta--diced 1 cm cubes
1/2 medium sized onion thinly sliced then diced
1/4-1/3 cup extra virgin olive oil
red pepper flakes for flavor and garnish
GARNISH:
2 oz pecorino romano or parmigiano reggiano finely freshly grated
black pepper
