Spunky Monkey Case Study 2020
Spunky Monkey Case Study 2020
SP2 2020
Spunky Monkey
You have been introduced to the issues facing the Spunky Monkey during your Problem Analysis assignment.
If you would like to see the full episode of Restaurant Impossible regarding this business, go to the Team
Model information pages and you will find the entire video available on the task page.
Very important note: You are not permitted to try and contact the Spunky Monkey as this is a FICTICIOUS
extension of the Restaurant Impossible episode involving an actual operating business. Do not attempt to
locate any of the contractors who have quoted on the renovations as they are also fictitious.
The owners of the Spunky Monkey currently have several outstanding debts that the bank have agreed to
combine into a single business loan together with the funding for the renovations.
The owners asked Chef Robert Irvine, his designer and builder to determine a few options and obtain three
quotations to renovate the Spunky Monkey to ensure that it is a venue that people want to attend. Below
you will find recommendations from Chef Robert and his designer as well as a series of three quotes from
local businesses to renovate the venue. The renovations will take one (1) week during which time there will
be no income generated by the restaurant and bar.
• General upgrade
o Removal of all carpet
o Repair and painting of all internal walls
o Replace light fixtures
o Repair OR replace flooring throughout entire venue (note kitchen and restaurant toilets
must be tiled)
o New signage
o New computer booking system and website design
o Full deep clean of entire venue (including kitchen and toilets)
• Restaurant upgrade
o New tables and chairs
o New crockery, cutlery and glassware
• Kitchen upgrade
o New POS order system
o Complete new kitchen equipment (management to select from options offered)
o Refurbishment of bar area
At the completion of the renovations the following facilities will be available at the Spunky Monkey:
o Seating for 80 people in dining room (20 square tables and 80 chairs – multiple
configurations)
o Seating for 60 people in bar (4 long tables, 10 cocktail tables, 60 bar stools)
o Serving lunch and dinner
o Open 6 days per week (Tuesday – Sunday)
o Employing:
▪ 1 head chef
▪ 1 sous chef
▪ 2 cooks
▪ 2 kitchen hands
▪ 4 bar staff
▪ 6 wait staff
▪ 4 cleaners
Your Task:
Create a spreadsheet model that the Owner and assistant manager can use to determine:
The model needs to accommodate all the data in this case study (above and below this task detail) and
provide the Owner and assistant manager the opportunity to select options as detailed in the quotations for
the renovations as well as enter data variables for the budget such as:
The budget will not consider cost of utilities (gas/electricity/water) or cleaning products. It is also assumed
that no additional renovations will be required throughout the period of this budget.
You should not make any assumptions when building the decision support model. All questions must be
posted to the Spunky Monkey Discussion Forum – available in the Communications section of the course
learnonline site.
