Project Description

Sensory evaluation is an important analytical tool in product development, ingredients reformulation,


process standardization and optimization, shelf life determination and quality control. The FNRI-SEL will
enhance value-adding activities in the food industry through the provision of improved sensory evaluation
services. In order to make this possible, FNRI simplified the processes for researchers performing product
and recipe development by employing ICT-enabled system called enhanced Sensory Evaluation
Laboratory (eSEL®) software. The software will cover data collection, development of test templates,
analysis and reporting and panel management.

At present, the sensory evaluation laboratory is working towards establishment of the quality management
system in compliance to ISO 17025 requirements for testing laboratories. The standard have detailed
requirement for management of sensory panelists. In this regard, Phase 3 of the project will manage
sensory data by creating a responsive database. Additional functions like access on database,
development of application, management and data analysis are possible.

eSEL® software, with the development of Panel Management Module, is now a complete package. A
computer-based solution that offers convenient, efficient, timesaving and science-based assessment of
product’s sensory characteristics and consumer preference

With this ICT solution, an improvement of the data collection system and data management can ensure
efficiency and reliability of the results as well as facilitate conduct of sensory evaluation.
Objectives
General:
To develop enhanced sensory evaluation software with an improved data management.
Specifically the software aims to achieve the following:
1. To increase efficiency in the conduct of recruitment, screening and selection process of
sensory panelists
2. To manage data of panelist for easy monitoring and verification
3. To come-up with beta version of panel management module
