Chocolate Singularity Cake

This recipe was inspired by a scene in "Gortimer Gibbon", where the bakery made a cake that
was so rich and chocolatey, that not even light could resist it!

The first time you serve this, I recommend leaving it unfrosted. A light dusting of powdered
sugar is a nice touch. If you must frost it, use a flavor like vanilla or strawberry frosting, NOT
chocolate. Most people have been conditioned to the idea that a cake’s chocolatey flavor
always comes from the frosting, so they’ll assume that what they’re tasting is the frosting. But
this cake has such a rich chocolate flavor all it’s own, that chocolate frostings can’t do it justice.

Ingredients:
2 c. Sugar
1 3/4 c Flour
3/4 c. Dark Cocoa
1 1/2 tsp Baking Powder
1 1/2 tsp Baking Soda
1 tsp Salt
2 Eggs
1 c. Milk (whole is best)
1 stick Butter, melted
1 tsp Vanilla
1 tsp Chocolate Extract
1 c. Strong Hot Coffee (decaf is ok)

Preheat oven to 350F, and grease or line two 9-inch cake pans.
Sift together dry ingredients. Add eggs, milk, butter, and extracts. Beat 2 minutes, then add
coffee. The batter will be very thin, don't worry about that.
Bake for 30-35 minutes.

Even though this is a dark chocolate cake, it's not bitter like most dark chocolate foods are.
