Taramasalata - a blender recipe

Ingredients

4-5 slices (around 200g) 2 day old white bread without crusts

4 Tbsp warm water

100-125g tarama

3 Tbsp olive oil

3-4 Tbsp lemon juice

Salt

Freshly ground black pepper

Method

1) Tear the bread into pieces, place in a bowl and pour over the warm water. Leave for 10 minutes,
then squeeze out any excess water and place into the blender.

2) Blend briefly on the mix speed.

3) Add the Tarama and blend on the mix speed until a paste is formed

4) With the motor running, gradually add the olive oil and lemon juice until a smooth purée is formed.
Scrape into a bowl and add seasoning to taste, taking care not to add too much salt .

5) Cover and chill in the fridge for a hour

6) Stir before serving
