Angel Hair Pasta with Smoked Salmon

I recently made this dish for dinner. It's simple and easy!

Ingredients:
 200g cooking Tasmanian smoked salmon
 2 garlic cloves, minced
 3 tb/s olive oil
 1/2 cup vegetable broth
 2 tb/s tomato puree
 1/2 ts/p salt
 1/4 ts/p pepper
 250g angel hair pasta
 1 cup baby spinach, chopped
 2 tb/s lemon juice
 1 tb/s grated lemon peel
 Shredded Romano or Parmesan cheese (optional)
Directions:
1. Cut the smoked salmon into pieces and set aside.
2. In a large pan, saute garlic in oil. Add vegetable broth, tomato puree, salt and
pepper. Bring to boil over medium heat. Reduce heat. Stir in smoked salmon and
simmer for 5 minutes.
3. Meanwhile, cook pasta according to package directions. Drain pasta and add to
the salmon mixture and toss to coat. 
4. Stir in baby spinach, lemon juice and peel. Cook for 1-2 minutes. Garnish with
cheese if desired.
