1. How would you determine the productivity of the production process at


Frito-Lay?
It can be determined by the output over the inputs, and depending on what we want to
measure, it could be a single-factor or multi-factor productivity. For the first one, the output are
the products manufactured and the input could be the labor-hour. For the second one, the
output could be the product and the input could be the raw material, capital, energy, and labor-
hour as well. It is also a good idea bring those calculations into dollars for an additional
representation of the productivity calculated.

2. How would you determine the productivity of the kitchen staff and wait staff
at Hard Rock Café?
To determine a single-factor productivity of the kitchen, for instance, I could calculate the
number of food cooked divided by the number of hours worked on cooking within a specified
period of time. Food (output) / labor-hour (input).

For the wait staff, I could use the number of order served divided by the hours worked within a
specified period of time.

This measurements would allow me to create standards and metrics to customize more complex
qualitative and quantitative criteria to use in the future.
