Food Fiber Content of Orange Sweet Potato Snack Bars and Red Beans for Patients
with Diabetes Mellitus Type 2.
Abstract
Diabetes mellitus type 2 is a disorder characterized by abnormally metabolic system in
which its prevalence is escalating. Management of diabetes mellitus type 2 can be run on by eating the proper snack. Consuming high dietary fiber snack is recommended to help lower blood glucose. Orange Sweet Potato and red kidney bean are kind of local food which candidates as the source of dietary fiber as potential food to be processed into a snack bar for diabetes mellitus type 2. This study aimed to know the difference between dietary fiber snack bars made from orange sweet potato and red kidney bean at different formulations. The design of this research was quasi-experiment with a completely randomized design (CRD) that used 3 formulations and 3 repetitions. The proportion of orange sweet potato and red kidney beans were F1 (90:10), F2 (80:20) and F3 (60:40). Analysis of dietary fiber content of snack bar used an enzymatic- gravimetric method. The result of total dietary fiber content of F1, F2, and F3 were 10,16%; 11.34%; 12.09%. Based on one way ANOVA test established that there was no significant difference in dietary fiber content between formulation 1, formulation 2 and formulation 3 (p> 0,05). The conclusion is the more addition of red kidney bean, higher content of dietary fiber involve in snack bar.
