How to brew 3RD WAVE COFFEE?

We going to start from clean cup to body taste!


How to Brew Chemex?
Chemex softest, clean cup coffee we serve! Why? Because of the filter and the vessel. It was built
to block air with thick filter so aroma always stay inside.

CHEMEX- 16 GRAMM OF COFFEE AND ON OUT 265 GRAMM OF WATER.

1. Prewet filter
2. Water out
3. Grind 16 gram of coffee (coarse but less than frenchpress), prepare hot
water
4. Strat time and add first 50 grams (try to prewet all ground particles)
water and wait 35 seconds (blooming time)
5. Add 100 grams of water, it should be now 150 grams. Add water when
water will sink to the bottom.
6. Add more water until 260 grams. That’s all! Time should be around 1.30-2.00
7. Throw paper filter away and swirl your coffee about 10 sec (we are mixing coffee with
oxygen to create more taste(aeration)).
8. READY! Add to coffee to green cup (Torino).

How to BREW SIPHON?


Siphon is similar taste to chemex but contains more oil. Why? Because of the filter. Taste is very
delicate and very clean, excellent flavour clarity.

SIPHON- 17 GRAMM OF COFFEE AND ON OUT 265 GRAMM OF WATER.

1. Make sure you prewet filter and fix the spring it to the tube
2. Take all water out
3. Grind 16 gram of coffee, prepare hot water
4. Start the scale
5. Add at the bottom of Siphon 240 gram of hot water
6. Wait until water migrate to upper part and add 16 grams of coffee
7. Stir the coffee and wait 1 minute to brew, remove heater away and wait to get
extract coffee to the bottom.
8. Clean upper part from coffee, wash the filter.
9. READY! Add to coffee to green cup (Torino).

How to BREW V60?


V60 is the most saturated coffee with ideal balance Why? V60 build to connect with more air, filter is
thinner than the chemex., that’s why more body in the cup.
V60- 16 GRAMM OF COFFEE AND ON OUT 265 GRAMM OF WATER.

1. Make sure you prewet filter


2. Take all water out
3. Grind 16 gram of coffee, prepare hot water, prepare hot water
4. Start the scale
5. Add first 50 grams of water and wait 30 seconds (Blooming time)
6. Add rest of the water until reaching point 260 grams of water
7. READY! Add to coffee to green cup (Torino).

How to BREW AEROPRESS?


AeroPress contains more body taste and more oils. Why? Filter is thin, by the pressure we are
pressing all juice and you can feel oilier cup.

AEROPRESS- 17 GRAMM OF COFFEE AND ON OUT 240 GRAMM OF WATER.

1. Make sure you prewet filter


2. Take all water out
3. Grind 17 gram of coffee, prepare hot water
4. Start the scale
5. Add first 100 gram of water in 10 sec and stir 10 sec
6. Add water until 240 and close with filter
7. On 1 minute and 10 sec, swirl it 2 times and press it (press in pitcher) in 20-25 sec
8. READY! Add to coffee to green cup (Torino).

How to BREW FRENCHPRESS?


French press has a lot of body and more texture than, more muddy taste. Why? Because of metallic
filter, doesn’t observe any oil and leaves it in the liquid.

FRENCHPRESS- 17 GRAMM OF COFFEE AND ON OUT 300 GRAMM OF WATER

1. Preheat the filter and French press


2. Take all water out
3. Grind 15 gram of coffee, prepare a hot water
4. Start the scale
5. Add water till the middle with hot water and wait 30 sec
6. Stir the coffee with spoon 5 times (very fast) be sure all coffee particles are
wet
7. Add water till the end and put plunger on the top
8. Wait 4 minutes till final brew (you can wait longer if your customer prefers more
stronger taste). If there is no time to wait, call customer and say to him/her wait 4
minutes
9. READY! Put next to green cup on a tray (cappuccino Verona).
For 2 cups we serve:
30 grams of coffee and 510 grams of water.

How to make FFF americano?


1. Grind 20 gram of any single origin
2. Prepare a clean portafilter and put on a scale
3. Grind all coffee inside of portafilter and match if you have 18g of coffee
4. Tamp it (medium pressure) and insert to the group. Double espresso

How to make…?
Matcha latte- 4 grams of matcha and 6 grams of Vanilla syrup
Acai berry latte- 4 grams of acai powder and 6 grams of Vanilla syrup
Turmeric latte- 4 grams of turmeric and 6 grams of Vanilla syrup
Peanut butter latte- 8 grams of pb.,8 grams of coconut sugar and 8 grams of digestive biscuit (add
inside of a pitcher)

Oat latte- 8grams of oats, 8 grams of coconut sugar and 1 gram of cinnamon.
