Caitlyn’s Apple Cider Donuts

Ingredients:
Cake batter
2 cups all purpose flour
3/4 cup sugar
1 1/2 tsp baking powder
1/4 tsp baking soda
1 tsp salt
2 eggs (1 4oz container unsweetened apple sauce + 2 tsp tapioca starch)
1/2 cup apple cider + 1/8+ c apple cider
1/4 cup soymilk with ½ Tbsp white vinegar
2 tbsp soft unsalted butter
1 tsp cinnamon

Topping
1 tsp cinnamon
2 tbsp butter, melted
1/2 cup sugar 1 Tbsp cinnamon (or to taste)

Pre-heat donut maker.

In a large bowl, whisk together the flour, sugar, baking soda, baking powder, salt and
cinnamon.
In another smaller bowl, blend the eggs, buttermilk, apple cider and butter. Pour wet
ingredients into dry ingredients and stir until just blended. Batter will be on the thick side.

Topping: Place melted butter in a small dish and cinnamon sugar on a larger dish. Dip
each donut quickly in the melted butter then the cinnamon sugar. If you do not do the
topping you will have to add the sugar to the batter.
