I really like SANCOCHO season meat: Place beef, pork, and goat in large bowl.

Add the lemon

juice. Season with parsley (or coriander), oregano, garlic, and 1 teaspoon of salt. Mix well and
marinate for at least half an hour, better an hour.Cook the meat: in a large cauldron, heat the
oil over high heat. Add beef, pork, and goat. Cook until golden brown. Add the rest of the
meats and corn. Cook, stirring, for a couple of minutes.Add water: lower the heat to medium
and pour into the water. Simmer until the boil breaks.Add Vegetables: Once the water starts to
boil, add auyama, chopped banana, and root vegetables (name, yautía, yucca). Grate or scrape
all the banana with the knife to turn it into pulp, add to the pot.Cook: Simmer and cover until
the last added ingredients are well cooked, we should have waited a bit too. If it gets too dry,
add water as needed. Season with salt to taste. Remove from the fire.
