Chocolate Chip Cookies

Ingredients Equipment
100g Butter, Softened Weighing Scales
60g Caster Sugar Mixing Bowl
60g Soft Brown Sugar Knife
1 Egg Wooden Spoon
1 tsp Vanilla Essence Parchment Paper
125g Plain Flour Baking Tray
½ tsp Bicarbonate of Soda
125g Chocolate Chips Optional:
Fish Slice ( lifter)
Wire rack

Method:

1. Pre-heat the oven to 180°C, Gas Mark 5.


2. Cream the butter and the soft brown and caster sugar together.
3. Add the egg and vanilla essence to the butter mixture and stir well.
4. Add the flour and bicarbonate of soda and mix well until there is no loose flour.
5. Add the chocolate chips and mix until they are spread evenly through the dough.
6. Cover a baking tray with parchment paper and spoon 12 equal portions of dough onto it. Be sure
to leave enough space between cookies to allow them to spread when cooking. Do not try to
squash them all onto one tray – use two trays if you need to.
7. Place into the pre-heated oven and bake for 8-12 minutes – depends on oven, watch carefully the
first time you bake to see how long they take to cook.
8. Remove from the oven and leave to cool or leave to stand for 5 minutes. then using a fish slice
remove the cookies from the baking tray and place them on a cooling rack.
9. When the cookies have cooled, place them in an airtight container where they can be stored for 2
- 3 days.

Meatballs with Tagliatelli and Quick Tomato Sauce

400g Beef Mince Mixing Bowl
400g Mince Pork Knife
3 tsp Dried Oregano Teaspoon
1 tsp Salt Frying pan
2 tsp Onion Salt\Powder Fish Slice\Lifter
1 Egg, beaten Baking Tray
3 Dashes Worstershire Sauce
1 tsp Garlic Powder For Sauce:
75g Breadcrumbs
Saucepan
Really Quick Tomato Sauce Teaspoon
2 Cartons of Passata – preferably Garlic and Herb ¼ Teaspoon
¼ tsp salt Wooden Spoon
1 Stock Pot – Chicken or Vegetable or Light Beef
1 tsp Dried Oregano For Pasta:
1 tsp Dried Basil
1 tsp Onion Salt Saucepan
½ tsp Garlic Powder Colander\Strainer
1 Dash Worstershire Sauce

Pasta:
Tagliatelli – 3 Nests per Person

Method

1. Turn the oven to 180°C.


2. Mash the meat in a bowl with a masher or spoon, then add the remainder of the meatball
ingredients – breadcrumbs, egg, basil, onion or onion powder, oregano, tomato puree (if
using) and salt.
3. Mix well until everything combined – you can use your hands (use gloves if you have them).
4. When combined, divide into equal sized portions (16-20) – should be the size of a ping pong
ball, (a little smaller than a golf ball).
5. Heat half a tablespoon of oil in a frying pan then add the meatballs and fry gently over a low
heat for 5 to 10 minutes, making sure to cook all sides.
6. Place the meatballs on an oven tray and bake in the oven for 10 – 15 minutes, to finish
cooking.

To make the Sauce:

7. Put all the sauce ingredients into a saucepan.


8. Bring to the boil and then simmer until the meatballs are ready.

9. Remove the meatballs from the oven and add them into the sauce, gently.
10. Cook for a further 15 – 30 minutes – the longer you can leave it the more the flavour will go
through, but it can be eaten immediately.
11. Cook the Tagliatelli per instructions on the packet.
12. Place a portion of the cooked tagliatelle in a bowl, put 3-4 meatballs and 2-3 spoons of sauce
on top and Enjoy!!
