Most of the suppliers for furniture and fixtures are based in metropolitan cities.

As far as food
items are concerned, they fell into two broad categories – perishable and non-perishable. The
non-perishable food items had a purchase cycle ranging from six months to one year. The
perishables consisted of four categories – dairy products, vegetables and fruits, chicken and
mutton products, and seafood. Dairy products are available in the city in abundance; some
fruits and vegetables could be procured from within the city, while exotic ones are procured
once a week from Chandigarh, a city around 500 kilometres from Amritsar. Chicken and
mutton products are sourced from within the city only. Most of the guests at the hotel are
international tourists and seafood is the main raw material for the Italian restaurant of the hotel.
As such, seafood constituted around 50 per cent of the cost of perishable food items
purchased. As Amritsar is a non-coastal city, seafood had to be procured on a daily basis
because the shelf life of fish is two to three days. The sea-food supplier keeps giving troubles
every now and then. We face issues with procurement of materials in the city, but that is only
initially, everything takes little time to settle, we will also settle in some time.
