Grilled Fennel, Orange and Goat cheese salad

 1 fennel bulb, chopped in large chunks


 1 orange
 Goat cheese
 Olive oil, vinegar, salt to taste

Grill fennel in a hot pan – when starts to gain color, add olive oil and a pinch of salt.

Segment the orange. Save juice for dressing the salad.

Plate grilled fennel, orange segments and crumbled goat cheese. Drizzle with orange juice,
olive oil and vinegar to taste. Can garnish with toasted almonds.
